With approximately 65% healthy fat content, this Avocado Cacao Pudding is a great Ketogenic recipe to keep you satiated, energized, and guilt-free.
Yields 3-5 servings:
What you will need:
3 Ripe Avocados
(approx 600 grams)
1/4 Cup Organic Cacao Powder
(4 Tbsp or 20 grams)
2 tsp of Organic Unrefined Coconut Oil
(approx 9-10 grams)
6 Tbsp of Organic Unsweetened Coconut Milk
(approx 90 grams)
2 Tbsp of Organic Raw Honey
(approx 42 grams)
1 tsp Organic Vanilla Extract
Optional: 1 Tbsp of Organic Chia Seeds
(10 grams)
What you will do:
– Take all of the ingredients, except the Chia Seeds, and put into the blender.
– Blend on high for 60-90 seconds until creamy.
– Transfer to a glass container and add the 1 Tbsp of Chia Seeds.
(These will introduce a ‘tapioca-like’ texture, so they can be left out if desired…or you can add more than 1 Tbsp too!)
– Stir, cover, and put in the fridge for at least 30 minutes.
– Remove from fridge, dish out your mindful serving, and ENJOY!
Remember to store the left-overs in an air-tight container in the fridge.
This should store well for up to 5 days.
