Delectably light yet surprisingly satiating, these Baked Zucchini Bites are the healthiest tot in town. Packing a boost of anti-inflammatory Vitamin C, this side dish will help you lower cortisol levels, build healthy skin, and strengthen your immune system.
You can easily double or even triple the recipe when serving to a group or meal-prepping for left-overs. Total Time = approx 25mins
What you will need:
Amounts of each ingredient may vary based on your meal prep intentions:
1 Large Organic Zucchini
(will be finely grated)
Organic Unrefined Coconut Oil
(needed to grease the baking sheet)
1-2 Organic Free-Range Eggs
(2 medium or 1 extra large, lightly beaten)
1/4 Medium Organic Onion
(finely minced)
1/3 – 1/2 Cup Organic Coconut Flour
1/2 tsp Organic Garlic Powder
Pink Himalayan Salt and Organic Black Pepper
Baking Sheet, Mixing Bowl, Measuring Cup, Grater, Peeler, Clean Dish Towel
What you will do:
– Peel the Zucchini and then grate it into a bowl.
– Will end up with approx 1-1.5 Cups of Grated Zucchini
– Place into a clean dish towel and wring out the excess water into the sink.
– Put to the side as you prepare the rest of your ingredients.
– Pre-heat your oven to 400 degrees.
– Peel and mince the 1/4 medium onion.
– Lightly beat the egg(s).
– Add the minced onion, egg, coconut flour, and grated zucchini to the mixing bowl.
– Add the garlic powder and season with the pink salt and freshly ground black pepper.
– Now grease the baking pan with the Coconut Oil.
– Stir your mixture, then use a tablespoon to scoop into your hands and roll into small bites.
– Place the bites onto the baking sheet and set your timer for 16 minutes.
– Bake at 400 degrees, and be sure to turn them over after 8 minutes of baking.
– The Zucchini bites should be baked until they are golden on the outside.
– Be sure to store left-overs in the fridge and re-heat using the oven (NOT a microwave).
