Scott’s Spiralized Summer Squash

This simple zucchini noodles (aka 'zoodles') recipe will give you a nutrient-dense dish with an appetite-fulfilling presentation. Zucchini can help you improve your gut health, insulin regulation, and thyroid/adrenal issues to aid in hormone balance and weight loss.

Amount of Zucchini used will be based on your meal-prep intentions. Total Time = 5 minutes

What you will need:

Organic Zucchini 
(Green Summer Squash)

Organic Extra Virgin Olive Oil
(Ideally, High Quality)

Organic Garlic Salt 

Organic Black Pepper 

Veggie Spiralizer

Steaming Pot
(Or Metal Colander inside a regular pot)

What you will do:

– Spiralize the Zucchini into the basket of the steaming pot.
(You can peel the skin first, or leave it on to retain even more antioxidants.)

– Gently steam the Zucchini Noodles (Zoodles) for 2-3 mins.
(Be sure to move them around half way through cooking.)

– Your Zoodles are ready to go when they have softened slightly (do not overcook).

– Top your serving of Zoodles with Olive Oil, and season with Garlic Salt and Black Pepper.

 Use as a light entree or side dish.

– Be sure to store any left-overs in the fridge and then serve cold.
