Coconut Macaroons

Here is one of my favorite recipes for a dessert that is loaded with healthy metabolism-boosting fat. It's incredibly easy, delicious, and gluten free!

To make 12-18 Coconut Macaroons:

What you will need:

1 Cup Shredded (unsweetened) Coconut

1 Tbsp Coconut Flour

1/2 Cup (plus 2 Tbsp) Coconut Milk

3 Tbsp Raw Honey 

1/4 tsp Pure Vanilla Extract

…and don’t forget to always buy ORGANIC!

What you will do:

-Preheat Oven to 350 degrees.

-Prepare parchment paper or non-stick baking sheet on a tray.

-Take all ingredients and put them in a saucepan, heat over high heat and mix them together, then lower heat to a simmer until it thickens (approx 2mins).

-Remove from heat, scoop mixture into balls (12-18) and place on the baking sheet.

-Bake until golden brown on the top (approx 5-15mins based on your oven).

-Let them cool. 

-You may also top each macaroon with a dairy-free organic mini-chocolate chip!
