PantryPic #243: Asparagus

-Asparagus.
-Look for stronger spears that snap when bent.
-Asparagus with “Jersey” in the name means it was bred in NJ to be all male, larger and longer, and considered to be the best tasting.
-One of lowest Glycemic Index vegetables (approx 15), meaning a low insulin response.
-Packed with folate (Vitamin B9) to help produce dopamine and serotonin to elevate your mood.
-Loaded with Vitamins A,C,E & K.
-Inulin content can help improve digestion as this complex carb has prebiotic properties.
-Shown to help lower blood pressure and protect against cancer.
-Contains a phytochemical called Racemofuran to help lower inflammation and reduce pain.
-Contains the amino acid Asparagine which aids in sythesis of proteins
(and also causes our urine to smell…even though only 25% of us possess the gene to be able to detect this odor).
-Benefical to the kidneys since this natural diuretic helps them regulate water better.

-Will take about 3 years to grow in your own vegetable garden, but will yield a healthy crop year after year.
-Wash thoroughly and trim the bottom ends before cooking.
-Lightly cooking (ideally steaming for 8-10mins) will enhance nutrient bioavailability.
-Consider adding on the side of your poached eggs, top a Salad or Guilt-Free Pizza, make asparagus soup, or even lightly grill and add to any meal!

Grilled Jersey Asparagus (Grill on HIGH for 1 minute on each side)

 -It is best to store Asparagus in the fridge in a glass of water, stems down. Use 1-2 inches of water and be sure to change the water every few days if it becomes cloudy. Covering the top with a plastic bag can help maintain the freshness and help keep the asparagus from absorbing other smells from the fridge.
